Sugar Industry![]() Sugar is one of the most important elements in the foods industry around the world; its global sales volume is around US$ 100 billion and growing. In Europe and North America, it is extracted from sugar beets, and from sugar cane in the rest of the world. It was in 1749 that Andreas Sigismund Marggraf, a pharmacist and chemist in Berlin, discovered that sugar from the domestic beet is absolutely identical to that of the tropical sugar cane - until then, only concentrated sugar cane juice had existed. But it was his disciple, Franz Carl Achard, who was first able to turn this discovery into an economically viable concept. He bred beets with an elevated sugar content and developed the technology for extracting the sugar from sugar beets. In the year 1802, he established the world’s first beet sugar factory in Prussia.
